Havsbitar v.1

Havsbitar (“Sea Bites”) is a range of fish fingers created in response to the growing pressure that the world’s fish stocks are suffering because of overfishing. The fish finger, which is a well-known everyday food product in Sweden, is used as a frame in order to make a complex issue more tangible.

 

Havsbitar 1.0 is a proposal that is intended to create possibilities for dialogue about an ideal industrialized 
commercial product.
 

It proposes a more resilient way to produce and consume processed food, with focus in Sweden, composed by local complementary ingredients for reducing the usage of fish and to enhance the eating experience (taste, flavour, texture) for fish finger lovers. In addition, fava beans (native in Sweden) are used instead of soy (common in many vegetarian and semi-vegetarian food products today).
 

Nowadays, endless processed fish products found in the supermarket are made of ingredients from all over the world. We as consumers often have little or no knowledge about its origin. Meanwhile, the production of these products can be responsible for the high exploitation of marine resources.

 

The aesthetics of Havsbitar aims to connect it to its ingredients and to the ecosystem it comes from (water), but keeping key characteristics of the fish finger we know today. The acceptance of the concept as a food product was an important variable of the project.

 The recipe was created in collaboration with the meal ecologist Ayhan Aydin.
